If you're brand new to Watches and want to get going, just hit Add Stopwatch
in the main screen for each person you are timing. Then tap on each watch to provide the actual name (either before the race starts or later).
Another way is to create the list of people in advance as a group and use the New Watches for All
button to create the race.
If you already have a list of people, you can go to People > All People > Edit > Add New People
to paste that list into the field and have it create all the people in Watches. It'll even import their email addresses.

Then you can just tap All Start
to launch the race, but you have many choices for how to run the race, depending on whether you want to start all at once or staggered (with a display board showing who's next), whether you want to have a Big Start button or use the Volume. See How do I launch a race? for more info. There's a lot of features available to customize how you use Watches.
